Wilton Romantic Castle Cake Set

My Opinion: A challenge, but fun with wonderful results.  Before purchasing this set, I recommended reading Wilton’s directions and the customer reviews.

A Challenge

When I saw this set in the store cake decorating section, I just had to try it.  I love miniatures, and thought making a miniature castle birthday cake would be a lot of fun.  (And yes, I was thinking of all the oohs and aahs when my friends saw it!)  The Princess’ Address cake did take a lot of time, but I was thrilled with the results!   Two pictures of the cake I made are in the gallery above – click on the thumbnails for larger views.   I would use this set again to make a different cake, not because I didn’t like how The Princess’ Address turned out, but just to avoid repeating myself.   See the pictures above for more Wilton ideas.

Frosting & Assembling the Cake

I decided to change the colors, and I did not make the 285+ fondant Forget-Me-Not flowers it called for in the directions.  With the little experience I had decorating cakes, I thought I’d try something simpler the first time – piping flowers with a flower tip directly on the cake, then leaves with a leaf tip.  I iced the towers, windows and doors several days ahead according to the directions.  I also made the cake layers a week or so ahead of time and froze them, wrapping them in layers of aluminum foil and then a zipper freezer bag.   I removed them from the freezer the night before I frosted and assembled the cake.  Wilton directs using plastic dowels attached to the towers with candy melts for support (they are quite heavy with an iced cone on top), but I found they broke apart.  Hot glue worked pretty well, which peeled off after the cake was dismantled.  Other reviewers of this product suggested using 4 inch long popsicle stick or drilling the bottoms of the towers and inserting wooden dowels.

Transportation

A large cylindrical plastic container fit over the cake to protect it.  Transporting the cake was a challenge, but we used a big cardboard box with crumpled newspapers surrounding the cake plate and it made it just fine.  We drove slow, and didn’t have to go very far!

My Opinion: Just what I wanted!

These New Castle Pops were perfect for a Princess’ Castle birthday theme. They made attractive take-home favors for the party guests when placed in cellophane treat bags and tied with a ribbon.  Just follow the directions that come with the mold and on the candy package, and they turn out great!  (I didn’t paint them like those in the picture, but I liked them plain.)  Be careful not to heat the chocolate too long or fill the mold too full.   I made some with Ghiradelli’s Double Chocolate Dipping & Candy-Making Bar and some with the White Chocolate Dipping & Candy-Making Bar – delicious, and almost as easy to use as candy melts.
